Solar dos Presuntos
One of Lisbon's best known and most iconic restaurants reopened in 2021, after a refurbishment process. The renovated Solar dos Presuntos presents itself larger, more modern and with a kitchen signed by FN hotelaria, which “is one of the best kitchens in Europe”, said Pedro Cardoso in an interview with Expresso.
The space for clients gained a greater dimension (450 seats), specially due to the new terrace created on the top floor, with capacity for up to 250 people. This area was decorated with a mural by the portuguese artist Vhils, which honors the founders of this restaurant: Evaristo Cardoso and Maria da Graça.
Also noteworthy on the second floor is the Solar dos Presuntos Academy, which is, with state-of-the-art equipment, a training center for new culinary talents. It includes “Mesa do Chef” (Chef's table) and also hosts special events.
Solar dos Presuntos also has a wine cellar with more than 1000 national and international references and an accommodation area with 4 rooms that serve to accommodate the Academy's guests, chefs and sommeliers.
The kitchen area is 10 times larger, with 400 m2, spread over several 'stations'.
The gastronomic offer so appreciated by the clients of this restaurant didn’t undergo major changes and continues to be led by chef José Silva, accompanied by Hugo Araújo. One of the novelties are the grilled specialties that come from a Josper oven with a high level of performance, supplied and installed by FN hotelaria.
Solar dos Presuntos, our long-time client, once again trusted FN hotelaria to develop the project, supply and install the hotel equipment for the kitchen areas (preparation, production, pastry and pantry), storage area, cold rooms and refrigerated areas, bars and wine cellar, as well as the necessary equipment for the Academy and the dining room.
