“Horta is creativity and sustainability" (*Horta, Portuguese word for vegetable garden). This is how Santiago Anolles defines one of PortoBay Group's most recent gastronomic projects in Madeira. The Uruguayan chef has run Horta since its opening in June 2023.
Declared straight away by its name, this is a restaurant dedicated to healthy and comfort cuisine, with a touch of innovation and surprise. The chef's words to NIT magazine when opening the space reveal its concept.
Horta is part of Vila Porto Mare resort, located next to the Italian restaurant Il Basilico. A common bar area separates them. As for the decoration, the main characters are the natural elements that span the entire area of the room with capacity for 70 people.
This focus on healthy food comes to complement the strong gastronomic offer of a hotel group that already offers its customers spaces dedicated to haute cuisine, Italian, Mediterranean and Asian cuisine.
As expected, given the concept adopted, local and seasonal ingredients have priority, many of which originate from a 5,000 m2 vegetable garden to which PortoBay Group has been dedicated since 2016.
In 2024, less than a year after its opening, Horta joined the list of restaurants recommended by the Michelin Guide.
Considered Il Basilico’s “brother”, Horta was born as an extension of it. In fact, it was the expansion of Il Basilico's kitchen that gave the title to the first briefing we received from PortoBay Group. It was in this context that we developed the project and supplied and installed the kitchen that both restaurants would end up sharing.
The different kitchen areas (healthy food kitchen, Basilico kitchen, pizzeria, pastry and pantries), the bar and the storage areas were the object of our intervention. We highlight, among others, the Baron cooking block, the Josper coal oven and the Valoriani pizza oven that equip the kitchen. In relation to cold storage areas, new cold rooms were installed and part of the existing system was also readjusted.
