Comer o mundo

FN hotelaria has been collaborating for many years with Chef Kiko Martins in the fulfillment of many of his restoration projects in Portugal.

Following the work carried out in restaurants of the group Comer o mundo, such as O Talho, A Cevicheria, O Asiático, O Watt or A Cafetaria - the last two in the EDP headquarters -, we highlight below the projects in which FN hotelaria collaborated between 2017 and 2019.

O SURF & TURF

It was in the beginning of 2017 that Mercado da Ribeira, in Lisbon, won a restaurant by chef Kiko Martins: O Surf & Turf.

Adopting the name and doing justice to the chosen concept ("surf and turf"), the menu makes a combination of flavors from the sea (surf) and from land (turf) in a diverse set of proposals. On the menu there is also room for some of the other restaurants' best sellers.

It has 25 seats at the counter, where it is possible for the customer to follow the preparation of the dishes, and a terrace with another 50 seats.

The kitchen equipment was supplied and installed by FN hotelaria.

O POKE

Located at El Corte Inglés, in Lisbon, Poke opened in late 2017, in a food court called “Gourmet Experience”.

It is an area of 5,000 m2 that houses 17 dining spaces, some of which by prestigious national chefs such as Henrique Sá Pessoa, José Avillez and Kiko Martins, Spanish chefs such as Pepe Solla and Aitor Ansorena, and international chefs as Roberto Ruiz, from Mexico. It is a restoration zone of a commercial area, but aims to differentiate itself by a more comfortable and sophisticated environment.

Doing justice to his traveler spirit that chef Kiko Martins always reflects in his restaurants, O Poke is inspired by Hawaiian and Asian cuisine. "Basically a poke is a salad of raw tuna seasoned with ponzu sauce", explained the chef in an interview to Sábado magazine about the restaurant opening. The menu also includes Portuguese ingredients in different poke variations, as well as some best sellers from A Cevicheria or O Talho.

FN hotelaria was the company responsible for the supply and installation of kitchen and pantry equipment, as well as for the execution of the kitchen extraction system.

O BOTECO

Born at the end of 2019 in Praça Luis de Camões (Lisbon), it brought Brazil to the center of Lisbon. Dedicated to Brazilian gastronomy, O Boteco is a tribute by Kiko Martins to Rio de Janeiro, the city where he was born, and to his childhood spent in Brazil, the first of more than two dozen countries where he would pass.

It brings from Brazil its name and the relaxed decoration of traditional bars (botecos) and cafeterias (lanchonetes), but with the necessary touch of sophistication.

The gastronomic offer includes comfort food, classic snacks and some of the most characteristic dishes from the brazilian cuisine, with a reinterpretation adapted to the present.

The equipment for kitchen, pantry, show cooking, bar and storage area was supplied and installed by FN hotelaria.
